The Bubbles Get a Second Shift at Pure Project Vista

Behind the patio, the brewery’s headquarters recovers fermentation CO₂ for reuse. The local story starts before the first pour.

Come for a beer. Leave with a newfound interest in gas recovery equipment.

Admittedly, that second part is a tougher sell.

But at Pure Project’s Vista headquarters, carbon dioxide produced during fermentation is recovered for reuse in brewery operations.

The bubbles get another assignment.

For Vista and San Marcos readers, that gives the business at 1305 Hot Spring Way a story beyond the tap list. Behind the gathering space is a working production facility with some interesting decisions built into the brewing process.

The Brewery Behind the Hangout

Pure Project identifies Vista as its brewery headquarters.

The company describes a 14,000-square-foot facility with a 15-barrel brewhouse and most of its canning and bottling operations.

Its indoor tasting room offers views of the brewhouse. There is also an outdoor patio.

Visitors get a place to gather and a glimpse of the operation behind the product.

The equipment may not have the patio’s charm. It does have something worth talking about.

Fermentation Gas, Back on the Clock

In a report published September 1, 2026, co-founder and brewer Winslow Sawyer said Pure Project’s DALUM CO₂ recovery system was fully operational by February 2026.

DALUM separately describes installing the equipment in early 2026.

The supplier explains that fermentation gas is recovered, purified, compressed, condensed and stored for reuse in carbonation, packaging and other brewery operations.

A resource generated during brewing gets put back to work.

The two businesses corroborate the installation and describe its operation. Their reports are not an independent environmental audit or proof that every bit of fermentation gas is captured.

The process is interesting enough without a miracle claim attached.

The Grain Has a Backstory, Too

Hops get tasting notes. Grain gets a silo.

Pure Project’s report, published in 2024 and updated in 2025, describes bulk storage of pilsner malt from Great Western Malting at the Vista headquarters.

Bulk storage reduces the need for individually bagged grain.

That report also says Pure West IPA uses entirely silo-stored Great Western grain. The Change Climate Project’s certification profile lists silo implementation as completed.

Packaging logistics may not inspire a toast. They still explain part of what happens before the glass reaches the table.

Read the Credentials Carefully

Pure Project’s stated philosophy includes using local and organic ingredients when possible. That does not establish that every beer is certified organic.

The Change Climate Project lists the business as Climate Label certified for 2026, with its first certification in 2020.

WILDCOAST separately documents a 2024 fundraising partnership supporting its marine-debris program.

The visitor details are straightforward: children and dogs are welcome, and wine and nonalcoholic options are advertised.

Food trucks are listed most Thursdays through Sundays, subject to changes. Check before arriving hungry. The silo is not the snack menu.
